Tomatillo Ranch

What is better then fresh tomatillo ranch dressing? Not much in my opinion. I love this salad dressing. You can get a similar version at Cafe Rio, but when you want to stay home and have a delicious taco salad, this dressing will fill your craving just fine!

Ingredients

1 pkg. Hidden Valley Ranch
1 cup mayo
1 cup chopped cilantro
2 cloves garlic
3 tomatillos
1/3 cup buttermilk
1/4 tsp cayenne or to taste

Directions

1. Blend in a blender all ingredients except mayo. Mix well.
2. Add mayo and pulse until creamy.
3. Store in fridge.

Jo's tip: If you don't like spice you don't have to add the cayenne pepper.

This is awesome! Where do you get the tomatillos?

Any grocery store. I tried growing some last year, but the spot I picked was not sunny enough! If you don't know what tomatillos look like just ask the produce guy!

I love Cafe Rio's dressing. I've seen recipes for it before, but haven't tried it yet. It sure looks easy.
